It’s time for a #VEGEbration this #Purtassi - #FASTfeasts Try out this delicious vegetarian Mexican rice casserole using Anika Premium White Basmati Rice! Take a pic and tag us once you’ve tried it! 2 cups cooked Anika White Basmati Rice 500ml ready made pizza/pasta sauce 1 onion chopped 1 whole green chillie, finely chopped 1/2 green pepper chopped 1/2 red pepper chopped 1/2 cup frozen corn 1 can drained red kidney beans 1 tsp chillie powder salt to taste 1tsp crushed garlic 1/2 cup cheddar cheese, grated 1/2 cup mozzarella cheese, grated Braise onions, frozen corn, peppers and green chili in ghee till done. add in garlic and all spices and cook for a few minutes. add in beans and cook for a few minutes. lastly add pasta sauce and cook till done. Been a busy few days in the garden so not had time to post my food on here. After a 2 hour dog walk on the beach it was a quick lunch of scrambled eggs, smoked salmon and half a pan toasted wrap. 1 carb serving Saturday, sunday and Monday all started with celery juice as per norm followed by apple porridge, 2 carb servings.. Time flew over the weekend so we missed lunch. Saturday night was fish and chips from the chippy 🙈🙈. I had nothing which was pre made or prepared and by 7pm didnt have the energy to cook. So I enjoyed every mouthful and was back on it on Sunday. Happy Monday! I'm up 3 pounds on the scale today. But no worries here. Now that I understand how and why my weight fluctuates, I'm a lot less concerned with the individual numbers on the scale and way more focused on the trend over time. . When I started my daily weigh-ins, I was trending at 188.8. One month later, and I'm trending at 184.7. Slow and steady progress is what I like to see. . So why am I up three pounds today? Because I ate like an asshole this weekend. And by that, I mean I had a Halloween party and consumed many adult beverages. But that's ok. This fitness journey is a lifetime commitment, and the only way it will work for me, is if I can continue enjoying my life. . The old Ashley would have felt guilty about my weekend overindulgences and used that as an excuse to continue to binge. What's the point in even trying if I keep messing up, right? . But the new Ashley has all the tools and knowledge to understand that this process isn't about perfection. It's about consistency. So I'm right back on track today, ready to crush this week. I've got an upper body workout tonight that I'm looking forward to. . MONDAY MOTIVATION 🤪🤪🤙🏻 _ Afternoon guys. This is just a quick reminder that being your own motivation can be so beneficial. Although there was nothing necessarily wrong with the left pic - I felt very uncomfortable and on the chunky side. _ A few weeks ago I decided to bite the bullet and look into online coaching. The idea of online coaching has always sort of worried me as I’m used to having a PT face to face in the gym. After looking at many, many online coaches and PTs, I contacted @__georgiefit and well... the rest is history. It’s funny because I’ve followed her for years and seen her transformation (insane) and now I can understand just HOW she looks like she does and how hard she trains 🤯😅💦. Absolute hats off to her. _ Can’t even explain how happy I am with my choice of coach and here’s why: 1. Georgie is SO affordable!!! It’s honestly amazing for the service and communication you get. I was quoted £300 per month from one PT 🥴 2. Always checks in on you - sometimes I’m really busy with studies so I don’t always check in with G myself and so she messages me and it just makes me feel that bit more supported 💖 3. Sick programming. Just wow. 4. There 24/7 for any question or concern _ I’ve been following my program from Georgie for 3 weeks now and THIS is the difference!!! My weight hasn’t really shifted but I’m eating MORE. The changes speak for themselves though, I’m putting the extra cals to good use in the gym as I’m training harder than ever 🤪💦 _ So yeah, massive thanks to @__georgiefit for these first few weeks, can’t wait to see what we can achieve long term 😎 I have never ever everrr been so motivated. Weigh in Day 💪🏻💪🏻💪🏻 • • This week I have gained 1.4lbs which is disappointing but I did have a few treats last week so I don’t feel too bad 🍰🍿🍰🍿 • • I had my first packet of crisps in over a month (roast beef monster munch 😋) and have eaten several slices of banana cake 🧁. I haven’t gone over the top and binge eaten so very much feel like last week could become normal life once I get to the point where I’m comfortable with my weight loss 😍😍😍 • • Everything is about balance and with all the exercise I’ve been doing, treats are ok with me 👍🏻 I’m back on my eating & exercise plan this week as I’ve still got weight to lose 🏋️‍♀️🏋️‍♀️🏋️‍♀️ • • I mostly ran a 10k in 1hr 7mins this morning in the rain, which I’m really pleased with and feel it’s given me a great start to the week.
