My first meatless Monday ever!! Curry roasted cauliflower with vegetables in spicy coconut curry with coconut rice 🍚. It was so good. I literally could eat the sauce with a 🥄 or straw. I told the fam yesterday that it would be meatless Monday and they were all like, huh? But guess what? They liked it! And you (and your heart) will, too!! 💕Jess
1️⃣Preheat oven to 400 degrees, run cauliflower florets with sesame oil, sprinkled with salt, garlic powder, curry powder, red pepper flakes, and chili powder. Roast until tender and crispy. I like them even a little crunchy.
2️⃣Start your rice. I used equal parts water and low-fat coconut milk, following he directions. Add a touch of salt and some chopped green onion.
3️⃣Heat some sesame oil in a pan with 1 tsp. each minced garlic and ginger. Add sliced red onion, sliced red and yellow peppers and green beans. You could use whatever veggies you like. Sauté for a minute or two on medium heat, season with some s&p, garlic powder and a little curry powder.
4️⃣Add ☝️ Tbsp flour and mix around. Add ☝️ cup low-fat coconut milk, ☝️ Tbsp. Red curry paste, and reduce. I like it a little 🌶 so I add some red pepper flakes. Note if you aren’t concerned about keeping it lower cal, use full fat coconut milk. It does taste sooo much better.
5️⃣Let veggies simmer in sauce until they are still a little crisp but not raw.
6️⃣Scoop 🍚 onto plate ( I’m so fancy I used a measuring cup to make a rice mountain) Top with sauce and veggies. Place cauliflower around plate. Garnish with green onions.
